Classic Meatloaf

Simple, hearty and healthy. Unsweetened ketchup keeps the sugar content at zero, making the sauce healthier than traditional meatloaf recipes!

Ingredients

3 slices Ezekiel bread

⅓ cup whole milk, organic

2 pounds ground beef, grass fed

½ medium yellow union, diced

3 cloves garlic, diced

1 celery stalk 

1 egg

½ cup ketchup, unsweetened (brands: primal kitchen, true made foods)

Redmond real salt, sea salt or pink himalayan salt

Black pepper

Instructions

Preheat oven to 400 degrees Fahrenheit.

Prepare a baking sheet with parchment paper, aluminum foil or silicone baking mat.

Place 3 slices of bread in a food processor, until fine crumbs form.

Transfer crumbs to a small bowl, stir in ⅓ cup milk.

Set aside and stir occasionally.

In a large bowl, combine beef, onion, celery, garlic, egg, ¼ cup ketchup, salt and pepper to taste.

Add bread crumb mixture.

Mix with hands until well blended.

Transfer mixture to the baking sheet and form into a loaf shape.

Bake the meatloaf for a total of 45-55 minutes - reaching an internal temperature of 160 degrees.

Throughout the baking process, about every 20 minutes, brush top of meatloaf with remaining ¼ cup of ketchup (do this 2 times throughout the baking process).

Let meatloaf rest for 10 minutes before slicing and serving.
